Goat Cheese and Portobello Mushrooms Pizza with Roasted Red Pepper Sauce
i made this for dinner and it was delicious!  yum!
Whole Wheat Pizza Crust2 Red PeppersLittle bit of onion1-2 Portobello Mushroom (sliced)5 oz. Goat CheeseDrizzle of Olive Oil•    Roast red peppers (whole) in broiler for about 20 min.  Rotate often so skin doesn’t get too black!  Roast onions at the same time•    After roasting, remove and cover with aluminum foil until cooled•    After cooling, peel the skins off the peppers and core (remove seeds, etc.)•    Place peppers, onion, oil, salt and pepper in blender/food processor and puree until smooooooth•    While peppers are cooling, broil mushrooms for 10-15 minutes•    Assemble pizza, with red pepper sauce, mushrooms, and crumbled goat cheese•    Cook at 400 for ~10-14 min
