Goat Cheese and Portobello Mushrooms Pizza with Roasted Red Pepper Sauce
i made this for dinner and it was delicious! yum!
Whole Wheat Pizza Crust
2 Red Peppers
Little bit of onion
1-2 Portobello Mushroom (sliced)
5 oz. Goat Cheese
Drizzle of Olive Oil
• Roast red peppers (whole) in broiler for about 20 min. Rotate often so skin doesn’t get too black! Roast onions at the same time
• After roasting, remove and cover with aluminum foil until cooled
• After cooling, peel the skins off the peppers and core (remove seeds, etc.)
• Place peppers, onion, oil, salt and pepper in blender/food processor and puree until smooooooth
• While peppers are cooling, broil mushrooms for 10-15 minutes
• Assemble pizza, with red pepper sauce, mushrooms, and crumbled goat cheese
• Cook at 400 for ~10-14 min
